I originally learned about selective breeds from the website Woodland Park Breeding Center. The website is down now, only available via the wayback machine. From Woodland Park's FAQ:
Q: What is selective breeding? How is it different from hexed breeding?
A: Hexed breeding is hacking the codes of a breed file to make it into a new breed. Selective breeding is breeding petz that aren't hexed for several generations to create new, "natural" breeds that breed true (meaning their pups/kittens fit the standards).

Petz comes with up to fifteen breeds and these breeds can be crossed to make
brand new player made breeds. This is different than hexing, where a player
can edit the files to customize petz. This is using the game's default
mechanics to create a breed that mostly functions like a vanilla breed, in
that it breeds true and needs no breed files.

Petz is a massively flexible game. It offers many different ways for players
to engage with the game and customize their experience. Of course, there is
the wonderful world of hexing (add link here) where players can modify files
to make a custom pet, but even without cracking open the code, you can do some
amazing things.
Petz has a fairly robust breeding system, allowing for lots of crosses between
the fifteen available breeds (and you of course can cross with hexed breeds
too if you want!). With this system, you can do something really amazing. You
can create your own breed.
No, Petz itself won't recognize it as a breed. It still will label your pet a
mixed breed. However, in all other ways, you can create your own breed without
ever editing the code. This is done via selective breeding.
Selective breeding is, as the name implies, when you selectively breed for
desirable traits. Over the course of generations, you can selectively breed
your petz into your own breed. With great care, you can make a lineage of
"mixed breed" petz that breed true to a standard you set.
Basically, it works just like breeds in real life do! Generations of careful
breeding and eventually you have a brand new breed!
